In this class you will learn to make a petit gateaux using a flavour combination I love, black sesame and passionfruit.
A black sesame and white chocolate mousse holds a passionfruit cremeux, on top of a black sesame sponge with a grey mirror glaze and crystallised black sesame. I love the way a bit of sugar and the acidity of passionfruit mix together to lift the black sesame to a whole new flavour
Class will run for approximately 3.5 hours on Saturday the 11th of September at 11am. You are not required to bring anything, just wear comfortable, closed toe shoes. You will be provided with a box to take your pastries home. All classes are run at our NEW ADDRESS 128F Park road, Miramar
