In this class you’ll learn how to make a dropped ice cream….but not quite! A Hokey Pokey mousse holds a ginger jelly, coated in a Hokey Pokey white chocolate shell, topped with a filo pastry cone thats filled with a passionfruit caramel. This dessert really is a showstopper!

You will be provided with a box to take your pastries home, but are welcome to bring reusable containers.
