In this class you’ll learn how to make a Strawberry Rhubarb Elderflower Savarin. What’s a savarin? It’s the same thing as a rum baba, but when soaked in something that’s not rum, it becomes a savarin (it’s just one of those weird French pastry rules). In this gateau we have a strawberry and elderflower soaked savarin, rhubarb compote, lightly poached rhubarb, strawberry mousse, strawberry glaze, vanilla mascarpone chantilly and some chocolate flower decorations. It’s a strawberry bombbbb! (There is also some raspberry in the recipes for natural colour, so please let me know if you’re allergic to them!)

Location: 7A Stewart Drive, Newlands - Parking available in the community car park, entrance off Batchelor street

 You will be provided with a box to take your pastries home, but are welcome to bring reusable containers.
