In this class you’ll learn how to make a pear, caramel and Tonka Madeline. A brown butter Madeline holds a caramel cremeux and pear gel centre, topped with Tonka cream, Tonka macerated pears and sablee flowers
this class contains gluten, dairy and eggs. It is nut and gelatine free and can be made gluten free upon prior request
