In this class you’ll learn to make a spiced, warming petit gateaux, perfect for winter! Two layers of ginger cake hold a kūmara mousse, caramel cremeux and pecan praline. Finished with Cantonese style pecans, crystallised ginger and caramelised white chocolate plaques. 

This class contains gelatine, dairy, eggs and nuts (pecans) it can be made gluten free upon prior request.

 You will be provided with a box to take your pastries home, but are welcome to bring reusable containers.
